Freeze ribeye steak for 20 to 30 minutes, then slice it very thin
Season the steak with salt and black pepper
Slice a hoagie roll lengthwise without cutting all the way through
Heat a griddle or large skillet over medium-high heat
Add a little oil or butter to the pan
Cook sliced onions until softened and lightly browned
Push onions to the side of the pan
Add the sliced steak to the hot pan
Chop and spread the steak as it cooks
Cook until the steak is browned and just cooked through
Mix the onions into the steak
Place provolone, American cheese, or Cheez Whiz over the meat
Let the cheese melt
Scoop the steak and cheese into the hoagie roll
Serve hot
