Pat the potatoes dry
Heat oil or butter in a skillet over medium heat
Add the potatoes to the skillet in a single layer
Season with salt and pepper
Cook without stirring for a few minutes to let them brown
Stir or flip the potatoes and continue cooking until golden and tender
Add chopped onion or garlic if desired
Cook until the onions are soft and the potatoes are fully cooked
Serve hot
