Trim off any excess fat, membranes, or tough bits
Place the gizzards in a pot and cover with water or broth
Add salt, pepper, garlic, onion, or other seasonings if desired
Bring to a boil, then reduce to a simmer
Cook until tender, about 1.5 to 2 hours
Drain and let cool slightly
Slice or leave whole, depending on preference
Heat oil or butter in a skillet if frying or sautéing
Add the cooked gizzards and season again if needed
Cook until browned or heated through
Serve hot with your choice of side dishes
