Pat the wings very dry with paper towels
Toss wings with salt and baking powder
Add black pepper and any dry seasonings
Place wings on a wire rack set over a baking sheet
Leave space between each wing
Bake at 425°F to 450°F
Flip wings halfway through cooking
Bake until skin is browned and crisp
Broil for 1 to 3 minutes if needed
Toss with sauce after baking if desired
Serve immediately
