Chill a mixing bowl and beaters or whisk for 10 to 15 minutes
Pour heavy whipping cream into the cold bowl
Add sugar if desired
Add vanilla extract if desired
Beat on medium speed with a hand mixer or stand mixer
Stop when soft peaks form for a lighter whipped cream
Continue beating until stiff peaks form for a firmer whipped cream
Do not overbeat or it will turn grainy
Use immediately or refrigerate until ready to serve
