Pat the chicken dry with paper towels
Season both sides with salt, pepper, and any desired spices
Heat a skillet over medium to medium-high heat
Add enough oil to coat the bottom of the pan
Let the oil heat until shimmering
Place the chicken in the pan without overcrowding
Cook until the first side is golden brown
Flip the chicken and cook the other side
Reduce heat if the outside browns too quickly
Cook until the chicken reaches 165°F internally
Remove the chicken from the pan
Let it rest for a few minutes before serving
