Gather your ingredients: meat or vegetables, onions, garlic, carrots, potatoes, broth or water, oil, salt, pepper, and herbs
Cut the meat and vegetables into bite-sized pieces
Heat oil in a large pot over medium heat
Brown the meat on all sides if using meat
Add onions and garlic and cook until softened
Add carrots, potatoes, and any other vegetables
Pour in broth or water until ingredients are mostly covered
Add salt, pepper, and herbs or seasonings
Bring the mixture to a boil
Reduce the heat to low and cover the pot
Simmer until the meat is tender and the vegetables are cooked
Stir occasionally and add more liquid if needed
Taste and adjust seasoning
Serve hot
