Sort through the beans and remove any stones, debris, or damaged beans
Rinse the beans thoroughly under cold water
Soak the beans in plenty of water for 8 to 12 hours, or use a quick-soak method if preferred
Drain and rinse the soaked beans
Place the beans in a pot and cover with fresh water by 2 to 3 inches
Bring to a boil, then reduce to a gentle simmer
Skim off any foam that forms on top
Cook until tender, usually 60 to 90 minutes, adding water as needed
Salt the beans near the end of cooking
Drain or use the beans with their cooking liquid as desired
