Preheat the oven to 325°F to 450°F, depending on the cut and desired doneness
Pat the roast dry with paper towels
Season the roast generously with salt, pepper, and any desired herbs or spices
Place the roast on a rack in a roasting pan or in a baking dish
Add vegetables or a small amount of liquid if desired
Insert a meat thermometer into the thickest part of the roast
Roast until the internal temperature reaches the desired doneness
Remove the roast from the oven
Tent loosely with foil
Let the roast rest for 15 to 30 minutes
Slice against the grain and serve
