How To Cook A Beef Steak?

Remove the steak from the refrigerator 20 to 30 minutes before cooking

Pat the steak dry with paper towels

Season both sides generously with salt and black pepper

Heat a heavy skillet or grill over high heat until very hot

Add a small amount of oil with a high smoke point

Place the steak in the pan or on the grill

Cook without moving it for 2 to 4 minutes per side, depending on thickness

Flip once and cook the other side

Sear the edges briefly if needed

Add butter, garlic, and herbs near the end if desired

Spoon melted butter over the steak while finishing

Check doneness with a meat thermometer

Remove the steak when it reaches your preferred temperature

Rest the steak on a plate or cutting board for 5 to 10 minutes

Slice against the grain and serve
