Pat the steaks dry with paper towels
Season both sides with salt and black pepper
Let the steaks sit at room temperature for 20 to 30 minutes
Preheat a skillet, grill, or broiler until very hot
Add a small amount of oil to the pan if using a skillet
Place the steaks on the hot surface
Cook without moving them for 3 to 5 minutes per side for medium-rare, depending on thickness
Flip once and cook the other side
Use a meat thermometer if desired
Remove at 125°F for rare, 135°F for medium-rare, 145°F for medium
Transfer the steaks to a plate
Let rest for 5 to 10 minutes
Slice against the grain
Serve immediately
