Peel the potatoes if desired
Cut the potatoes into even sticks
Rinse the cut potatoes in cold water
Soak the potatoes in cold water for 30 minutes
Drain and dry the potatoes thoroughly
Heat oil in a deep pan or fryer to 325°F
Fry the potatoes in batches for 3 to 5 minutes
Remove and drain the fries
Increase the oil temperature to 375°F
Fry the potatoes again for 2 to 4 minutes until golden brown
Remove and drain on paper towels
Season with salt immediately
