Wash and peel the potatoes if desired
Cut the potatoes into even slices, cubes, or wedges
Pat the potatoes dry
Heat a skillet over medium to medium-high heat
Add enough oil or butter to coat the pan
Place the potatoes in a single layer
Season with salt and any desired spices
Cook without moving them for a few minutes until the bottoms are golden
Flip the potatoes and cook the other sides
Reduce heat if they brown too quickly
Continue cooking until tender and crisp
Remove from the pan and drain on paper towels if needed
Serve immediately
