Cube 8 cups of bread and dry it out overnight or toast it in the oven
Melt 1/2 cup butter in a large skillet
Add 1 cup chopped onion and 1 cup chopped celery
Cook until softened
Stir in 2 to 3 cloves minced garlic
Add 1 to 2 teaspoons dried sage
Add 1 teaspoon dried thyme
Add 1/2 teaspoon dried rosemary
Add salt and black pepper to taste
Place the dried bread cubes in a large bowl
Pour the butter and vegetable mixture over the bread
Add 2 to 2 1/2 cups warm chicken or vegetable broth
Add 1 to 2 beaten eggs if desired
Toss until evenly moistened
Transfer to a greased baking dish or stuff into poultry
Bake at 350°F until heated through and golden on top, about 30 to 40 minutes
