Preheat oven to 350°F
Melt butter in a large skillet
Add chopped onion and celery
Cook until softened
In a large bowl, combine cubed bread or cornbread
Add cooked onion and celery
Mix in dried sage, thyme, salt, and black pepper
Add chopped parsley if desired
Stir in beaten eggs
Pour in chicken or turkey broth gradually
Mix until evenly moistened
Add cooked turkey giblets if desired
Transfer mixture to a greased baking dish
Cover with foil
Bake for 30 minutes
Remove foil
Bake for 15 to 20 minutes more until golden brown
Let stand before serving
