Peel and chop sweet potatoes into even chunks
Place the chunks in a pot and cover with cold water
Add a pinch of salt
Bring to a boil, then reduce to a simmer
Cook until the sweet potatoes are very tender, about 15 to 20 minutes
Drain the sweet potatoes well
Return them to the pot or place in a bowl
Add butter, milk, salt, and pepper to taste
Mash until smooth or leave slightly chunky
Adjust seasoning and consistency as needed
Serve warm
