Open Instagram and go to your profile
Tap the highlight you want to add to, or create a new highlight
Tap New under the Story Highlights section if creating one
Select the stories you want to add from your archived stories
Tap Next
Enter a highlight name if needed
Tap Add or Done to save the highlight
