Pat fish dry with paper towels
Season fish with salt and pepper
Set out three shallow bowls
Put flour in the first bowl
Beat eggs in the second bowl
Put breadcrumbs, panko, or cornmeal in the third bowl
Dredge fish in flour
Dip fish in beaten eggs
Coat fish in breadcrumbs
Press coating onto fish gently
Place breaded fish on a plate
Chill briefly before cooking if desired
Fry, bake, or air-fry until cooked through and golden
