Pat pork chops dry with paper towels
Season both sides with salt and pepper
Set up three shallow bowls
Put flour in the first bowl
Beat eggs with a little water or milk in the second bowl
Put breadcrumbs or panko in the third bowl
Dredge each pork chop in flour and shake off excess
Dip the pork chop into the egg mixture
Press the pork chop into the breadcrumbs to coat evenly
Repeat with the other side
Place breaded pork chops on a plate or wire rack
Let the coating set for a few minutes before cooking
Cook as desired by frying, baking, or air frying
