Pat the roast dry
Season all sides with salt, pepper, and any desired spices
Sear the roast in a hot skillet if desired
Place chopped onions, carrots, and potatoes in the slow cooker if using
Add the roast on top of the vegetables
Pour in a small amount of broth, water, or sauce
Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours
Check that the roast is tender and fully cooked
Remove the roast and let it rest for 10 to 15 minutes
Slice or shred the roast and serve
