Pat the steak dry
Season generously with salt and pepper
Let it sit at room temperature for 30 to 60 minutes
Preheat the oven to 400°F to 450°F
Heat a heavy skillet over high heat
Add a small amount of high-smoke-point oil
Sear the steak for 2 to 3 minutes per side
Sear the edges briefly
Add butter, garlic, and herbs if desired
Transfer the skillet to the oven
Roast until the internal temperature reaches your preferred doneness
Use a meat thermometer
Remove the steak 5°F before the target temperature
Rest the steak for 5 to 10 minutes
Slice against the grain
Serve immediately
