Rinse the bean sprouts under cold water
Remove any wilted or discolored sprouts
Drain well
Heat a pan or wok over medium-high heat
Add a small amount of oil
Add minced garlic if desired
Add the bean sprouts
Stir-fry for 1 to 3 minutes
Season with salt and pepper
Add soy sauce if desired
Cook until just tender and still crisp
Serve immediately
