Preheat the oven to 400°F (200°C)
Remove any damaged outer cabbage leaves
Rinse the cabbage and pat it dry
Cut the cabbage into wedges or thick slices
Remove the core if desired
Place the cabbage on a baking sheet or in a baking dish
Brush or drizzle with oil
Season with salt and pepper
Add garlic, paprika, or other seasonings if desired
Flip or turn the pieces to coat evenly
Roast for 25 to 40 minutes
Turn halfway through cooking
Bake until the edges are browned and the cabbage is tender
Serve hot
