Preheat the grill to medium heat
Pat the chicken wings dry
Season the wings with salt, pepper, and desired spices
Lightly oil the grill grates
Place the wings on the grill over indirect heat
Close the lid and cook for 20 to 25 minutes
Turn the wings every 5 to 7 minutes
Move the wings over direct heat for the last 5 to 10 minutes
Grill until the skin is crisp and the internal temperature reaches 165°F
Remove the wings from the grill
Let the wings rest for a few minutes before serving
