Remove chorizo from casing if needed
Slice or crumble into bite-size pieces for faster cooking
Heat a skillet over medium heat
Add chorizo to the dry pan (or add a small splash of oil only if needed)
Cook 8–12 minutes, stirring often, until browned and cooked through
Break up large pieces while cooking
If there is excess grease, spoon it off
Optional: add onions, peppers, or garlic during the last 2–3 minutes
Optional: simmer in a sauce for 5–10 minutes to deepen flavor
Serve immediately or add to tacos, rice, pasta, or eggs
