Rinse the dry chickpeas and remove any debris or damaged beans
Soak in plenty of water for 8 to 12 hours
Drain and rinse after soaking
Add the chickpeas to a pot and cover with fresh water by 2 to 3 inches
Bring to a boil
Reduce to a simmer
Skim off any foam that rises to the top
Cook until tender, about 1 to 2 hours
Add salt only near the end of cooking
Drain and use, or cool and store in their cooking liquid
