Sort and rinse the purple hull peas
Pick out any debris, stones, or damaged peas
Place peas in a pot and cover with water or broth
Add chopped onion, garlic, salt, and pepper if desired
Add a piece of ham, bacon, or smoked meat for flavor if desired
Bring to a boil over medium-high heat
Reduce heat to low and simmer until peas are tender
Stir occasionally and add more liquid if needed
Cook until the peas are soft but not mushy
Taste and adjust seasoning before serving
Drain if needed and serve hot
