Rinse 1 cup green lentils under cold water
Pick over lentils to remove any debris
Add lentils to a pot with 3 cups water or broth
Optional: add 1 bay leaf, 1 clove garlic (smashed), and/or 1 small onion (chopped)
Bring to a boil over high heat
Reduce to a gentle simmer
Simmer uncovered until tender, 20–30 minutes (stir occasionally)
Drain excess liquid if needed, or keep some for a thicker texture
Season near the end with 1/2–1 tsp salt (to taste) and black pepper
Optional serving ideas: add olive oil, lemon juice, chopped herbs, or vinegar after cooking
