Pat the halibut dry with paper towels
Season with salt and pepper
Heat a skillet over medium-high heat
Add oil or butter to the skillet
Place the halibut in the skillet
Cook for 3 to 4 minutes on the first side
Flip the fish carefully
Cook for 2 to 4 minutes on the second side
Remove when the fish is opaque and flakes easily
Rest for 1 to 2 minutes before serving
Serve with lemon or herbs
