Rinse the ham hocks under cold water
Pat them dry
Place the ham hocks in a large pot
Add enough water or broth to cover them
Add seasonings if desired, such as onion, garlic, bay leaves, pepper, or salt
Bring the liquid to a boil
Reduce the heat to a low simmer
Cover the pot
Simmer until the ham hocks are tender, usually 2 to 3 hours
Check occasionally and add more liquid if needed
Remove the ham hocks from the pot
Use the meat in soups, beans, greens, or other dishes
Strain and save the cooking liquid if desired
