Preheat the oven to 300°F
Line a baking sheet or roasting pan with foil
Remove the membrane from the back of the ribs
Pat the ribs dry with paper towels
Rub the ribs with salt, pepper, and your preferred seasoning or dry rub
Place the ribs on the prepared pan, meat side up
Cover tightly with foil
Bake for 2.5 to 3 hours until tender
Remove the foil
Brush the ribs with barbecue sauce if desired
Increase the oven temperature to 425°F
Bake uncovered for 10 to 15 minutes until the sauce is caramelized
Rest the ribs for 10 minutes
Slice between the bones and serve
