Remove the steak from the refrigerator 20–30 minutes before cooking
Pat the steak dry with paper towels
Season both sides generously with salt and pepper
Preheat a skillet, grill, or cast-iron pan over medium-high heat
Add a small amount of oil with a high smoke point
Place the steak in the hot pan or on the grill
Cook for about 4–6 minutes per side for a 1-inch steak
Flip only once during cooking
Use a meat thermometer to check the internal temperature
Cook until the center reaches 150–155°F
Remove the steak from the heat
Let it rest for 5–10 minutes before slicing
Slice against the grain and serve
