Pat the New York strip steak dry
Season generously with salt and black pepper
Let the steak sit at room temperature for 20 to 30 minutes
Preheat a cast iron skillet or grill over high heat
Add a small amount of high-smoke-point oil to the pan if using a skillet
Place the steak in the hot pan or on the grill
Sear for 3 to 4 minutes on the first side
Flip the steak and sear for 3 to 4 minutes on the second side
Sear the fat edge for 30 to 60 seconds if needed
Reduce heat if the outside is browning too quickly
Cook to desired internal temperature
Remove the steak from heat
Add butter, garlic, and herbs if desired
Rest the steak for 5 to 10 minutes
Slice against the grain
Serve immediately
