How To Cook Perfect Beef Steak?

Choose a well-marbled steak, 1 to 1.5 inches thick

Pat the steak completely dry

Season generously with salt and black pepper

Let the steak sit at room temperature for 20 to 30 minutes

Preheat a heavy skillet or grill until very hot

Add a small amount of high-smoke-point oil if using a skillet

Place the steak on the hot surface

Do not move the steak while it sears

Sear the first side for 2 to 4 minutes

Flip the steak once

Sear the second side for 2 to 4 minutes

Sear the edges briefly if needed

Add butter, garlic, and herbs near the end if desired

Baste the steak with melted butter for extra flavor

Check doneness with a meat thermometer

Remove at 125°F for rare

Remove at 130°F for medium-rare

Remove at 140°F for medium

Remove at 150°F for medium-well

Rest the steak on a plate or cutting board for 5 to 10 minutes

Slice against the grain

Serve immediately
