Wash the potatoes well
Leave the skins on or peel them, as preferred
Cut the potatoes into evenly sized pieces
Place the potatoes in a pot and cover with cold water
Add salt to the water
Bring the water to a boil
Reduce to a gentle simmer
Cook until the potatoes are just tender when pierced with a fork
Drain the potatoes immediately
Let the potatoes cool before mixing with other ingredients
