Pat the steak dry and season both sides with salt and pepper
Let the steak sit at room temperature for 20 to 30 minutes
Heat a skillet or grill over high heat until very hot
Add a small amount of oil if using a skillet
Place the steak on the hot surface
Cook without moving it for 2 to 4 minutes per side, depending on thickness
Flip once and cook the other side
Use a meat thermometer and remove the steak at 130°F to 135°F
Let the steak rest for 5 to 10 minutes before slicing
Slice against the grain and serve
