Preheat oven to 375°F (190°C)
Pat turkey breast dry with paper towels
Rub with olive oil or melted butter
Season with salt, black pepper, garlic powder, onion powder, and herbs
Place turkey breast in a roasting pan or baking dish
Add a little broth or water to the pan if desired
Roast uncovered until the internal temperature reaches 165°F (74°C)
Check the thickest part with a meat thermometer
Cover loosely with foil if the top browns too quickly
Remove from oven and let rest 10 to 15 minutes
Slice against the grain and serve
