Peel the yucca root completely
Cut it into manageable chunks
Remove the tough woody core from the center
Rinse the pieces under cold water
Place the yucca in a pot and cover with water
Add salt if desired
Bring to a boil
Reduce to a simmer
Cook until tender, about 20 to 30 minutes
Drain the yucca
Serve boiled, mashed, fried, or roasted
