Wash the eggplant and pat it dry
Trim off the stem end
Trim off the blossom end if needed
Place the eggplant on a cutting board
Cut it lengthwise for slices
Cut it crosswise for rounds
Cut it into cubes after slicing if needed
Cut it into strips for fries or stir-fry
Use a sharp knife for clean cuts
Keep your fingers tucked away while cutting
