Wash the Roma tomatoes and dry them
Place a tomato on a cutting board with the stem end facing up
Use a sharp knife
Slice off a thin piece from the stem end if needed to create a flat base
Cut the tomato lengthwise from stem end to tip
For wedges, cut each half lengthwise again
For slices, place the tomato cut-side down and slice crosswise
For dice, cut into slices first, then stack and cut into strips, then cut across the strips
Remove the seeds and gel if desired
Keep fingers tucked away from the blade while cutting
