Pat the chicken wings completely dry
Season the wings with salt and any desired spices
Heat oil in a deep fryer or heavy pot to 350°F to 375°F
Use enough oil to fully submerge the wings
Carefully add the wings to the hot oil in small batches
Fry for 8 to 12 minutes, turning if needed, until golden brown and cooked through
Check that the internal temperature reaches 165°F
Remove the wings with a slotted spoon or fryer basket
Drain on a wire rack or paper towels
Let the oil return to temperature before frying the next batch
Toss the wings in sauce if desired and serve immediately
