How to Do Roast Potatoes in the Oven?

Preheat the oven to 425°F to 450°F

Peel the potatoes if desired

Cut the potatoes into even chunks

Place the potatoes in a pot and cover with cold salted water

Bring to a boil and cook until the edges are just tender

Drain the potatoes well

Shake the potatoes in the pot to rough up the edges

Let the potatoes steam dry for a few minutes

Add oil, salt, and pepper to a roasting pan

Heat the roasting pan in the oven until the oil is hot

Carefully add the potatoes to the hot pan

Turn the potatoes to coat them in oil

Roast for 20 to 30 minutes

Turn the potatoes halfway through cooking

Roast until golden brown and crisp

Serve immediately
