Scoop seeds from the pumpkin
Remove pulp and stringy bits
Rinse seeds in a colander
Pat seeds dry with a clean towel
Spread seeds in a single layer on a baking sheet or tray
Let seeds air-dry for 24 to 48 hours
Stir or turn seeds occasionally for even drying
Dry seeds in a warm, dry, well-ventilated place
Use a dehydrator on low heat if desired
Use an oven on the lowest setting for a short time if needed
Store fully dried seeds in an airtight container
