Harvest onions when tops fall over and begin to dry
Gently lift bulbs from the soil
Shake off loose dirt without washing
Leave the tops and roots attached
Spread onions in a single layer in a warm, dry, well-ventilated place
Keep them out of direct rain and moisture
Cure for 2 to 4 weeks until necks are fully dry and papery skins are tight
Turn onions occasionally for even drying
Trim roots and tops after curing
Store only fully cured onions in a cool, dry, dark place
