Choose a ripe dragon fruit with bright color and slight give
Wash the skin under running water
Cut the fruit in half lengthwise
Scoop out the flesh with a spoon
Separate seeds from the flesh if desired by pressing through a fine strainer
Eat the flesh as-is, or cut into cubes/slices
If using the skin, peel off the outer layer and only eat the inner flesh
Store cut dragon fruit covered in the refrigerator and use within 1–3 days
