Discard most of the starter, leaving a small amount in the jar
Add equal weights of flour and water to the remaining starter
Stir until no dry flour remains
Cover loosely
Let it sit at room temperature until bubbly and active
Repeat on a regular schedule
Use a consistent feeding ratio, such as 1:1:1 or 1:2:2 by weight
Feed more often if the starter is warm and active
Feed less often if the starter is stored in the refrigerator
Use clean utensils and a clean jar each time
Keep the starter at a stable temperature
Adjust flour type and water amount as needed for thickness
Feed before baking when the starter is at peak activity
