Discard most of the starter, leaving a small amount in the jar
Add equal parts flour and water by weight to the starter
Mix until no dry flour remains
Scrape down the sides of the jar
Cover loosely to allow airflow
Let it sit at room temperature until bubbly and active
Repeat on a regular schedule based on how often you bake
Use more frequent feedings for a more active starter
Refrigerate between feedings if you bake less often
Feed again after removing starter for baking
