Wash the cherries thoroughly
Remove stems
Pit the cherries if desired
Pat the cherries dry completely
Spread the cherries in a single layer on a baking sheet
Freeze the cherries until solid
Transfer the frozen cherries to airtight freezer bags or containers
Remove as much air as possible
Label the bags or containers with the date
Store in the freezer until needed
