Heat a nonstick skillet over medium-low heat
Add 1–2 teaspoons oil or butter
Crack an egg into a small bowl
Pour the egg into the skillet
Cook until the whites set and the edges look firm
For over-easy: flip carefully and cook 15–30 seconds
For over-medium: flip carefully and cook 30–60 seconds
For over-hard: flip carefully and cook 60–90 seconds
For sunny-side up: don’t flip; cook until whites set
Season with salt and pepper
Turn off heat and serve immediately
