Wash and dry the eggplant
Slice it into rounds, strips, or cubes
Sprinkle with salt and let sit for 15 to 30 minutes
Pat the eggplant dry with paper towels
Heat oil in a skillet over medium to medium-high heat
Add the eggplant in a single layer
Fry until golden brown on one side
Flip and fry the other side until tender and browned
Remove and drain on paper towels
Season immediately with salt or desired spices
